I took five full days of doing almost nothing, which felt incredible, even if a tiny part of me still feels guilty when I slow down. That&#8217;s something I&#8217;ve been working on for years.</p><p>That being said, I relaxed far more than planned, and I&#8217;m choosing to see that as a sign of growth, giving myself permission to refuel my mind, body, and soul. But now, it&#8217;s time to ease back into things. Writer&#8217;s block is real, even for an amateur like me, but I did have an entry in mind for right after the holidays: the inevitable <em>&#8220;What to do with leftovers&#8221;</em> write&#8209;up.</p><p>And honestly, it applies to any event. Because all leftovers are worthy of a second act.</p><p>So here it is. Maybe it isn&#8217;t the New Year&#8217;s reflection you expected, but I think we&#8217;re all still recovering from the hustle and bustle of the holiday season. A single week of celebration that most of us spend months preparing for.</p><p>Consider this a little inspiration, maybe not for today, but for what I like to call <em>leftover season</em>.</p><p>I&#8217;m only now finally seeing the bottom of my fridge drawers, and in the process I managed to create a couple of recipes that made all those lingering ingredients feel completely refreshed.</p><p>The recipe I want to share with you is actually a recycled favorite from my Thanksgiving leftover season, and I couldn&#8217;t wait to bring it back this time around: the Turkey Pot Pie. You&#8217;re probably thinking, <em>what&#8217;s the big whoop?</em> And honestly, I get it. A pot pie is classic. A creamy filling made with whatever you have on hand, tucked under a decadent pastry crust. But speaking for myself, I&#8217;ve always found the traditional version a little too heavy. And then there&#8217;s the eternal question: <em>is the dough actually cooked through?</em> So I went ahead and modified it</p><p>The key to this version comes down to two things: the phyllo pastry and slightly thickening the filling so it doesn&#8217;t spill out. I like to make individual portions so everyone gets their own little purse of unctuous goodness. The phyllo gives you that buttery richness without the heaviness of a traditional pie crust, so the whole dish feels lighter while still being deeply satisfying.</p><div carrots, diced (optional but lovely)</p></li><li><p>2 cloves garlic, chopped</p></li><li><p>2 cups leftover cooked turkey, shredded or diced</p></li><li><p>1 cup leftover vegetables (peas, green beans, roasted veg, whatever you have)</p></li><li><p>2 tablespoons flour</p></li><li><p>1 cup turkey or chicken stock</p></li><li><p>1/2 cup cream or milk</p></li><li><p>pinch of cayenne Add the Dijon, thyme, cayenne, salt, and pepper. Let it simmer for 3&#8211;4 minutes until glossy and cohesive. Add the chopped parsley. The filling should be thick enough that it doesn&#8217;t spill everywhere, but still luscious. Set aside to cool.</p><h4><strong>2. Prepare the phyllo</strong></h4><p>Preheat your oven to 375&#176;F. Lay out one sheet of phyllo, brush lightly with melted butter or oil, then layer 2&#8211;3 more sheets on top, brushing between each one. You want a stack that&#8217;s sturdy enough to hold the filling but still delicate. Cut the layered phyllo into squares large enough to fit into a muffin tin or small ramekins.</p><h4><strong>3. Assemble the pot pies</strong></h4><p>Gently press each phyllo square into the muffin tin or ramekin, letting the edges drape naturally. Spoon the filling into each one. Gather the overhanging phyllo and twist or fold it into a little purse on top. Brush the tops with more butter or oil. Sprinkle with flaky salt if you&#8217;d like.</p><h4><strong>4. Bake</strong></h4><p>Bake for 18&#8211;22 minutes, or until the phyllo is deeply golden and crisp. Here, you&#8217;ll find all the tips and tricks you need to ensure your turkey is moist, flavorful, and genuinely worthy of the spotlight this year. With a few simple techniques, the same ones I rely on in my own kitchen, you can turn the &#8220;dry bird&#8221; stereotype into a thing of the past.</p><p>With Christmas just a few days away, many of you are gearing up for the most iconic meal of the season. It&#8217;s the dish everyone expects, the one that anchors the table, and the one that somehow still causes the most stress. But turkey doesn&#8217;t need to be complicated. With intention and technique, it becomes something beautiful.</p><p>For me, it all comes down to four pillars: <strong>brining, seasoning, temperature, and patience</strong>. If you focus on those, everything else falls into place.</p><p>And of course, the turkey is only as good as what surrounds it. The sides are where the personality comes in: the brightness, the comfort and the nostalgia. So today, I&#8217;m sharing not only how I approach the bird, but also two of my favorite co-stars: my cranberry sauce and stuffing. My secret weapon is an <em>&#201;pices &#224; Tourti&#232;re</em> spice mix. Trust me, it adds a festive depth you never knew your turkey needed. And then there&#8217;s the non&#8209;negotiable: butter under the skin. You can fold in chopped thyme and rosemary if you&#8217;d like, but the butter itself is essential. It bastes the meat from the inside out, keeping everything tender, aromatic, and beautifully seasoned.</p></li><li><p><strong>Temperature</strong>: Before cooking, temper your bird. Let it come to room temperature, you want to reduce the temperature shock that happens when cold meat hits a hot oven. That shock causes the muscles to tense up immediately, which forces out juices long before the turkey has a chance to cook properly. A relaxed bird is a juicy bird. </p></li><li><p><strong>Patience</strong>: When it comes to roasting, <em>low and slow is my motto</em>. I cook mine on convection at 300&#176;F until the meat thermometer reads 145&#176;F (insert it into the thickest part of the thigh, making sure it doesn&#8217;t touch the bone). From there, I give it a quick broil to achieve that golden, crispy perfection everyone wants on their holiday table. Once that&#8217;s done, let your turkey rest for at least 30 minutes before carving so the juices can redistribute. By the time it&#8217;s fully rested, the internal temperature will naturally rise to 165&#176;F, exactly where you want it.</p><p></p><p>Yes, I&#8217;m a chef. Can I cook a turkey without a meat thermometer? Absolutely. But if I have a tool that removes the guesswork and guarantees perfect <em>cuisson</em>, why wouldn&#8217;t I use it? Do yourself and your guests the favor: make sure that turkey is cooked to perfection. It&#8217;s such a simple step, and it changes everything.</p></li></ul><h4><strong>Stuffing</strong></h4><p>Ok, so I might get cancelled for this one&#8230; but I use my mom&#8217;s recipe and, in my completely biased opinion, it is the best. I can&#8217;t believe I&#8217;m actually outing myself here, but this is the truth.</p><p><strong>Ingredients:</strong></p><ul><li><p>1 large onion, diced</p></li><li><p>4 celery stalks, diced</p></li><li><p>4 cloves garlic, chopped</p></li><li><p>2 tablespoons olive oil</p></li><li><p>1 box <em><strong>Stove Top</strong></em> turkey stuffing mix <em>(</em>YES, you read that correctly)</p></li><li><p>2 cups chicken stock</p></li><li><p>1 green apples, peeled and diced</p></li><li><p>1 cup toasted walnuts, chopped</p></li><li><p>1/2 cup flat&#8209;leaf parsley, chopped</p></li></ul><p><strong>Method:</strong><br>Sweat down the onions and celery with the garlic in the olive oil until everything is soft and translucent. Add the Stove Top and mix well, then pour in the chicken stock. Let it cook for a couple of minutes so the flavors come together, then fold in the apples, walnuts, and parsley. The stuffing should be firm but still hold together beautifully.</p><p>And that&#8217;s it, your stuffing is ready for stuffin&#8217;. You can scale the recipe up depending on the size of your turkey by doubling, tripling, or even quadrupling the quantities. It&#8217;s wonderfully forgiving, and it always delivers.</p><p>There is something so deliciously familiar about this recipe. The moment I catch a whiff of it, I&#8217;m transported straight back to my childhood kitchen. It&#8217;s the culmination of a vision I had exactly one year ago, when the idea of creating my own website was just beginning to take shape. After a week of glitches and countless tests, it&#8217;s finally live for all to see, and I couldn&#8217;t be more excited. As the holiday season approaches, my ovens hum almost twelve hours a day, filling the kitchen with warmth and the scent of festive dishes for my clients. All this cooking has me thinking about the perfect holiday meal, the kind I love to serve when friends and family gather around my table.</p><p>As I reflected on what makes a holiday meal truly special, I realized it&#8217;s not just the food itself. It&#8217;s the way each dish tells a story. The roast that anchors the table, the sides that bring color and comfort, the desserts that spark nostalgia. Together they create more than a menu; they create memories. For me, the perfect holiday spread balances tradition with a touch of creativity, something familiar enough to feel cozy but surprising enough to make guests smile.</p><p>Much of my culinary inspiration comes from Italy, not only from the time I spent cooking there, but also from growing up surrounded by my Italian besties and their families. And now, with my own in&#8209;laws. Their kitchens were always alive with the aroma of simmering sauces, freshly baked bread, and the kind of laughter that only happens when everyone is gathered around the table. A custom I&#8217;ve adopted over the years is the <em>Feast of the Seven Fishes</em>. Sometimes there are more than seven, sometimes fewer, but the essence remains the same: on Christmas Eve, the table is devoted entirely to fish and seafood. This tradition, rooted in Italy, was later adapted by Italian Americans into the &#8220;seven fishes&#8221; we know today. At its heart, a holiday meal should be more than a menu,  it should be a celebration of connection, with dishes that carry stories and memories in every bite.</p><p>With just one weekend left before Christmas to finish your shopping and finalize your menus, I thought I&#8217;d share a little inspiration from our own family table. This year&#8217;s <em>Feast of the Seven Fishes</em> reads as follows:</p><h4><strong>Giant Shrimp Cocktail</strong></h4><p>A twist on the classic by going XL with the shrimp. Instead of a simple boil, I poach them in a miso&#8209;based broth, which adds depth and umami to the crustacea even when served cold. For the sauce, a touch of gochujang stirred into the traditional cocktail base brings subtle heat and complexity. The result? An effortless elevation of a dish guests have seen countless times, now transformed into something memorable and new.</p><div><hr></div><h4><strong>Salmon Gravlax</strong></h4><p>Gravlax is wonderfully straightforward, yet endlessly adaptable. I like to interchange the liquor used for curing depending on the occasion. This year, I&#8217;m using Sortil&#232;ge, a maple&#8209;based whiskey that adds a distinctly festive touch.</p><p><strong>For the cure, stick to this ratio:</strong><br>&#8226; 1 kg salmon<br>&#8226; 60 g salt<br>&#8226; 60 g sugar<br>&#8226; 45 ml liquor</p><p>To these proportions, add aromatics of your choice, dill or tarragon, citrus zests, or even beet juice for a jewel&#8209;toned finish. Once the salmon is coated, wrap it tightly and let it macerate for 36 hours, flipping halfway through. The result is silky and fragrant.</p><div><hr></div><h4><strong>Baccal&#224;</strong></h4><p>This one is my personal favorite, rich in flavor while somehow remaining beautifully light. I start by sweating down onions with plenty of garlic, a pinch of chili flakes, and anchovies (the more the better). Once everything melts together, I add a small jar of strained capers and a generous handful of pitted olives. I love using dried black olives for their intensity.</p><p>To this base, I add a can of my favorite whole peeled tomatoes and let the sauce simmer for at least an hour &#8212; two if time allows. When the flavors have deepened and the sauce has thickened, I nestle in pieces of thoroughly rinsed Baccal&#224; and transfer the dish to a 400&#176;F oven until the fish is cooked through. A sprinkle of chopped parsley at the end brightens everything. It&#8217;s the kind of rustic, slow&#8209;simmered dish that fills the room with warmth long before it reaches the table.</p><div><hr></div><p>To complete our seven fishes, a bright, tender<strong> octopus salad</strong>; a<strong> seafood chowder</strong> so good you&#8217;ll be tempted to lick the bottom of the bowl; and <strong>Coquilles St&#8209;Jacques</strong>, which feel impossibly elegant yet deeply comforting. And this year, my brother&#8209;in&#8209;law is making a <strong>pasta dish with moscardini </strong>(miniature octopus), one of my absolute favorites. It&#8217;s the kind of dish that reminds me why I love this tradition so much: simple ingredients, treated with care, shared with the people who matter most.</p><div><hr></div><div Hosting, to me, is the extension of my craft. Food is not only what brings people together, it&#8217;s what makes those gatherings memorable.</p><p>Hosting doesn&#8217;t mean cooking for days or juggling endless details. The secret is simple: thoughtful touches that elevate the familiar. A roast brightened with a seasonal condiment. A jar of marmalade that doubles as breakfast or a sweet takeaway. These gestures remind us that hospitality is generosity, not choreography.</p><p>Every table needs a centerpiece, something that says <em>this is the heart of tonight</em>. It could be the turkey roast, golden and fragrant, or a punch bowl gleaming like stained glass. </p><p>Just as important as the food is the welcome. Make people feel expected: greet them warmly at the door, take their coats, and offer them something right away. A spread of charcuterie boards, a tray of amuses&#8209;bouches, even playful pigs in a blanket can set the mood. Just a quiet rebellion against routine. Most Sundays, I cook simply. But this one called for fire.</p><p>It started with eggplant, charred until smoky and soft, like velvet with a little bite. Then came shrimp and salmon, demure at first, but awakened by heat, garlic, and unapologetic anchovies.</p><p>And because I couldn&#8217;t resist: chilies. Real ones. Not the polite kind that blush in cream sauce, but the kind that speak in tongues. </p><p>Tomatoes joined the affair&#8212;ripe, crushed, and simmered until they surrendered their sweetness to the spice. The sauce bloomed slowly, kissed by brine and heat, deepened by desire.</p><p>I built it like a love letter to puttanesca&#8212;with capers and olives, sure&#8212;but then I ripped it up and rewrote it in bold italics. I called it <em>Puttanesca Arrabbiata</em>, mostly as a joke, partly as a truth. She&#8217;s the kind of pasta that tosses her hair and says, serve me hot or not at all.</p><p>The pasta itself&#8212;al dente, of course&#8212;offered resistance at just the right moment, like a good conversation. It held the sauce close but never let it drown the details.</p><p>Garden oregano&#8212;fresh, almost wild&#8212;was the final touch. It doesn&#8217;t ask permission. It grows where it wants and flavors everything it touches. I respect that energy.</p><p>The table? Just me and a good glass of red. A playlist low in the background. No fanfare, but every bite felt like a secret I wanted to keep.</p><p><strong>And before the first bite&#8212;<br>Freshly cracked pepper.
